Dormilona Tinto 2022

A self-confessed ‘lazy-bones’ winemaker (Dormilona is Spanish for ‘lazy bones’), Jo Perry is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery. She uses only organically and biodynamically farmed fruit from high-quality vineyards across Margaret River and the Swan Valley. Natural wines that are varietally correct, clean & most importantly delicious. Tinto is made in the young nuevo style grown from organic Shiraz from Osmington. Simply harvested in the cool morning light, wild fermented in open bins then basket pressed off to tank before sugar completion. Natural malo, racked, blended & bottled. No additions, finings nor filtration to bottle.
