Waihopai Valley, home of the Catalina Sounds vineyards, is blessed with long sunny days, cool nights, low autumn rains and free draining soils. TASTING NOTES: This Sauvignon Blanc varietal is pale straw in colour with a trace of some green hues. It has a muted yet bold bouquet – a welcome combination of herbal notes further enhanced by tropical fruits, citrus and stone fruit. The palate experiences a cleansing moment, gracefully proportioned with a mineral acidity bringing the fruit flavours to a long, filling climax. Its balanced flavour profile is lively and fresh. For this delightful wine, a few suggested food pairings include simple seafood dishes, Asian-themed dishes, goat cheese, and grilled vegetables. For the more adventurous, however, this Sauvignon Blanc when chilled, partners well with French, Indian and Japanese cuisine.
