In 1997 Phil Sexton arrived in the Yarra Valley in search of altitude, aged soils, slopes of exposure, regular rainfall and cool to cold night time temperatures and a gentle breeze off the protecting mountain ranges. Why, because he wanted to grow amazing Chardonnay and Pinot Noir fruit to make wines of purity and finesse. Applejack Vineyard is located on a dramatic slope and is closely planted and fastidiously managed. The basalt based underlying volcanic soil and rock produce a characteristically fine yet extended, spicy and firm palate. The Giant Steps Applejack Vineyard Pinot Noir 2021 had a terrific vintage for both vineyard quality and quantity. The overall temperature during the growing season was lower than average which led to a long slow ripening period and great concentration of flavours and natural tannin structure. The drawn-out harvest then led to a long slow ripening period which produced thicker skins, riper stems and allowed us to work with more whole bunch fermentation. I’ve long considered the Applejack vineyard to be one of the greatest sites for pinot in Australia and I’m not sure I’ve seen a better version than the 2021. A deep, bright, crimson purple. Maraschino cherry into plum, there’s an exotic and riotous amalgam of Asian five-spice and a gentle savoury, umami character. What elevates this vintage is the concentration, along with Applejack’s trademark perfume and spice. Just so vibrant and fresh on the palate, the tannins are both silky and plentiful.
