WINERY INFORMATION: Peter and Judy Rymill planted their vineyards in the Coonawarra region in 1974, which subsequently produced a wide range of handcrafted wines showcasing great balance, finesse and power. The estate is currently managed by their son, John Rymill. Sandrine Gimon joined the winemaking team at Rymill Coonawarra in July 2005 to practice Australia’s innovative winemaking approaches. TASTING NOTES: The grapes used to craft this dazzling Rymill Classic Cabernet Sauvignon were selected, fermented, and stored in French oak barriques for maturation. This led to the creation of a full bodied Cabernet displaying a deep red colour and vibrant purple tinges. The luxurious bouquet exhibits lively aromas of black cherries, dark chocolate, cassis, mint and cedar box, while the rich and intense palate contains flavours of dark fruits, chocolate and liquorice. These lush fruit characters combine with a layer of balanced acidity and fine tannins, to end the wine in a smooth and lingering climax. This full flavoured red wine has been crafted to relish when young and fresh, but will develop gracefully with cellaring. Pair it with Indian goat curry or Beef Bourguigon to enjoy an appeasing meal.
