Sullivans Cove French Oak Single Cask Single Malt Whisky comes from the world famous distillery in Tasmania, Australia. Each barrel displays its own special character, producing only a few hundred bottles of rare quality, so each time another Sullivans Cove French Oak is opened, a new page in Sullivans Cove’s famed story is turned. This single cask whisky is aged in French oak casks that were previously used to mature a prior batch of Sullivans Cove French Oak, unlike their core range French Oak Single Cask, which is aged in ex-tawny (Australian port-style fortified wine) casks. Their Second Fill whiskies demand a genuinely excellent cask, highlighting the rich flavour from the French oak timber and enabling Sullivans Cove’s distinctive spirit character to come through. French Oak Second Fill TD0078 was distilled in February of 2006 and decanted in September of last year for a maturation of Fifteen years, Six months, in a single, 300L French oak ex-Tawny cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. I really love this. Fruit waves, herbal elixir-like notes and sweet biscuits come together for an interesting, delicious, and comforting dram.
