Product Information: Each vintage of The Signature is named in honour of an individual who has made a significant contribution to the culture and traditions of Yalumba. The Cabernet Sauvignon was sourced from four vineyards in the Barossa Valley. The diversity of our vineyard selection provides the rich, lifted Cabernet Sauvignon aromatics and palate structure for which The Signature is renowned. The Shiraz comes from vineyards of varying age, with the oldest planted in 1945. These blocks are of sandy loam, featuring yellow sand and ochre clay over red clay. The combination of these Barossa Valley blocks provides a Shiraz with sweetness, fullness, depth and layers of complexity. The 2021 Signature is comprised of 53% Barossa Cabernet Sauvignon 47% Barossa Shiraz and matured for 19 months in 23% new Hungarian hogsheads, French barriques and hogsheads, balance in older French and Hungarian barriques and hogsheads. While the Barossa is home base, they draw on the varied climates and soil types across South Australia to make wines grown in some of the country’s finest wine regions. Barossa is arguably the single most famous wine region in Australia, comprised of Barossa Valley and Eden Valley, making it one of the only areas in Australia to have neighbouring warm and cool climate growing conditions. Yalumba is privileged to have access to some of the oldest vineyards in the world in Barossa Valley, including 1889 bush vine Grenache and 1908 Shiraz. The Coonawarra estate is on prized terra rossa soil known as The Menzies Vineyard growing predominantly of Cabernet Sauvignon vines. Vineyard: The wines of the 2021 vintage are that of balance, style and exceptional varietal characteristics. Late winter and spring rains set the vines up for a high quality year. Summer was mild with below average daytime temperatures and cool nights, which led to the development of fabulous colour, pristine aromatics and flavours with good natural acidity. Nose – Perfumed, Red Licorice, Dark Cherries Perfumed and seductive with alluring floral notes, red licorice, blackcurrant and dark cherry aromas. Palate – Ripe Red Cherries, Blackcurrants, Ironstone Tannins Refined and balanced with generous, dark red cherry fruit merging into ironstone tannins. Finish – Well Defined Fruits, Long, Linging Tannin Very elegant Signature overall with defined fruit characteristics with a long, lingering tannin profile. A beautiful, deep red in colour. Perfumed and seductive with alluring floral notes, red licorice, blackcurrant and dark cherry aromas. The palate is delightfully refined and balanced with generous, dark red cherry fruit merging into ironstone tannins. This is a full-bodied wine of great balance, style and defined fruit characteristics with a long, lingering tannin profile. A very elegant Signature. This wine could easily be in the running for one of the best 2021 wines from the region. Deep in colour with stunning purity across the spectrum of blackberry, black cherry and dark plum fruits. Fragrant with citrus and almond blossom notes, aniseed, cedar, new leather, tobacco, panforte, bay leaf, wood spice and Christmas cake. Sporting a stunning fruit density and tension, it glides, thick with fine, billowing tannin, with a pitch-perfect cadence across the palate, lacy acidity playing its part in focusing the wine’s intrinsic elements with aplomb.
